Cocoa Craisin Overnight Oats


I know. I'm sorry. Another oatmeal recipe. But in my defense, I don't think I've shared many overnight oatmeal recipes yet. And you can't go wrong with chocolate for breakfast right?

Overnight oats are a great option for those crazy busy mornings when you know you won't have a lot of time to get ready. They just take a few minutes the night before and in the morning they're all ready for you to enjoy. Since you make them in a cup or jar you can even eat them on the road if you're really in a rush--as long as you drive safe now ya hear?!

One of my favorite things about these overnight oats are the chia seeds. I actually don't think you should even make overnight oats without chia seeds. They make it or break it for me. If you've never tried chia seeds before you really should go pick some up now. They are chalk full of fiber, protein and healthy fats. Even better, when soaked in liquid they expand and gel up so that you get a tapioca-like texture. Glorious.

Cocoa Craisin Overnight Oats
(Makes 1 Serving)


 Ingredients:

· 1/2 cup oats
· 1 tablespoon chia seeds
· 1 tablespoon cocoa powder, scant
· 2 teaspoons liquid sweetener of choice or 4 drops liquid stevia
· 1 tablespoon craisins
· 3/4 cup almond milk
· Optional toppings: more craisins, sliced banana, almonds...really whatever you want!

Directions:

1. Combine all of the ingredients (expect the optional toppings) in a jar and mix well.
2. Place the jar in the fridge over night or for a few hours.
3. When ready to eat, stir the mixture or pour it into a bowl and top with additional toppings!

A Should-Be Lazy Morning and Pumpkin Chocolate Chip Scones


Home again!! At least for five days. Brett and I got home late last night after our flight from Nashville was delayed an hour. Our good friend Garret who was with us in Louisville and Nashville stayed the night at our place too. We were all looking forward to sleeping in and having a lazy morning so we went straight to bed as soon as we got home. The boys did great at sleeping in, but. I on the other hand woke up at 4:45. Story of my life. It's as if my body doesn't want me to get a good nights sleep when I'm in my own bed. 

By the time the boys woke up I had read for an hour, done a short ab workout, gone grocery shopping and was starting to make scones. I always love the rare occasions when Brett and I have someone stay over at our house. I love being able to cook for people and make them feel at home!


I know the boys never turn down food so I figured I'd make a hearty breakfast for us (well, a second breakfast for me). I'm excited to say that this scone recipe is my own! I love how my confidence in baking and cooking is beginning to increase since I've gotten married and started this blog. I feel like I've learned a lot of basic recipes so now I'm able to experiment a little. I love it!


While I know we've left "pumpkin season", I was really craving some pumpkin chocolate chip scones and I'm happy to announce that my first scone recipe turned out pretty darn good. These scones are dense and moist and oh, so chocolaty. The best part really is the large chocolate chips that I used from Trader Joe's. We don't have a Trader Joe's near our house yet, but Brett let me stock up at one on our way home from Christmas vacation in Destin, Florida. 


Another beautiful thing about these scones is that you probably have all the ingredients in your house and you can make the entire recipe in one bowl...well except for a small liquid measuring cup:) I hope you try these out! The boys gave a giant stamp of approval. Score!


Pumpkin Chocolate Chip Scones
(Makes 8 Scones)


 Ingredients:

· 1/2 cup unsweetened almond milk
· 1 teaspoon apple cider vinegar
· 1 teaspoon vanilla extract
· 1 cup all-purpose flour
· 1 cup whole wheat flour
· 1 cup quick oats
· 1/2 cup natural cane sugar
· 2 tablespoons brown sugar 
· 1 tablespoon baking powder
· 1/2 teaspoon salt
· 1 teaspoon cinnamon
· 1/8 teaspoon nutmeg
· 5 tablespoons earth balance
· 1/2 cup pumpkin puree
· 1/2 cup chocolate chips (the bigger the better!)

Directions:

1. Preheat the oven to 350 degrees and line a baking tray with parchment paper.
2. In a liquid measuring cup, whisk together the almond milk and apple cider vinegar and let it sit for a few minutes. If it begins to curdle that’s good! (you can also omit the apple cider vinegar if need be.)
3. Add the vanilla extract to the milk and vinegar after it has sat for a few minutes.
4. In a large  bowl, whisk together the flours, oats, sugars, baking powder, salt, cinnamon and nutmeg.
5. Add the earth balance and pumpkin puree into the dry ingredients and use a pastry cutter to cut in the “butter” and pumpkin until course, pea-like pebbles form. Don’t over mix! (If you don’t have a pastry cutter, just use two knives to cut in the wet ingredients.)
6. Pour in the milk and vanilla mixture and mix until just incorporated. Again, don’t over mix.
7. Fold in the chocolate chips.
8. Take the dough (it will probably be sticky) and place it on the parchment paper in the middle of the baking pan. Use your hands to pat it down until you get a circle that is about 1.5 inches high.
9. Cut the circle into 8 wedges, but don’t separate them.
10. Bake for 25-27 minutes until cooked through and golden.


Make sure you eat one warm right out of the oven while the chocolate is still warm and gooey.

Happy New Year! (Recap from Louisville and Nashville)

I'm about to leave for the airport to head home!! Brett and I and a bunch of our friends/coworkers have been in Louisville and Nashville this past week. We were in Louisville for work, but we were able to walk around downtown Louisville a lot and even got in some fun runs across the Ohio river and through a beautiful part of downtown Louisville. All the houses were so old and historic and it was fun to look at the architecture as we ran. 

This Florida girl doesn't do too well in the cold though. Brett and I went on a 4.5 mile run the day before we left and my hands and toes were numb by the time we finished. I even wore gloves, but they didn't help much. My hands were bright red and burned when I got back to the heated hotel as my circulation started to come back. Gotta love red, grandma hands. It was painful, but worth it. 


After our work in Louisville ended on Tuesday morning, we rented a car and drove with three of our friends to Nashville where Brett's parents live. We only stayed one night but got to take two naps, eat tons of home-cooked food and go downtown for New Years Eve in that short amount of time. I always feel like I'm on vacation when I'm at their house. 

New Years Eve in downtown Nashville was fun. We got there around 10 and walked around and enjoyed the Christmas lights and decorations and the live music playing at every corner. Around 11 or so, we joined the mass group of people standing in front of the main stage where the music note was going to drop. The concert wasn't very great right before midnight. I wish I would have been more lively. We all had a good time and enjoyed the fireworks at midnight. We booked it to the car after the note dropped in order to beat the crowd trying to drive home. All in all it was a great night with no crazy stories, which was great!



This morning we all went to the Pancake Pantry for breakfast and I got a big bowl of oatmeal. I know. How can I order oatmeal at the Pancake Pantry?? I do what I want. And I love oatmeal.

We all took nap number two after breakfast and then I went for a run on a trail by their house while my mother-in-law walked. It wasn't as long as we though it was, but the weather was cool and crisp and it felt great to get outside! I really like running in cooler weather. I find I push myself more.


I'm excited to get home for a few days before heading out again for a work retreat. I'm hoping to make some delicious concoctions in the kitchen during my short time at home so I can have some recipes to share with you all. I've also been thinking about some goals for this new year so I'll be sure to share those too!
