In the past I would often have stomach aches after eating certain foods such as rich desserts, frozen yogurt, and processed foods. It was annoying. I then heard about the "Forks Over Knives" documentary and was quickly convinced that my idea of healthy eating (tons of greek yogurt, low-calorie or sugar free foods, pretzels and processed turkey deli meat) wasn't quite as healthy as I thought. I went vegan cold turkey. And I haven't turned back.
It hasn't been a completely smooth experience since I went vegan. I've definitely botched a few meals (and still do!) and often struggle to find things to eat in social settings, but it's been worth it. It's gotten easier too as I've continued to research vegan recipes and experiment in the kitchen.
I'm excited you're checking out my blog because it means you have an interest in cooking and are possibly considering changing your diet. To be honest, I sometimes still can't believe I call myself vegan and have cut out meat and dairy from my diet. I used to think vegans were crazy and I swore that I would never stop eating dairy. Yet the more I've learned about the benefits of a plant-based diet and have experienced those benefits, I don't know if I'll ever go back!
